The Cavalli family has been making Balsamic vinegar since 1920, although they were renowned winemakers long before that. Whilst the company is fairly young, when compared to the established families in Modena, it is renowned for creating a flavorsome range of balsamic vinegars. The 'tradizionales' are sold as many ages, from 6 years old to the elite 25 year old. Like many of the Modena producers, Cavalli has started to diversify into lower grade condimento products and derivatives. This attracts a class of customer, which cannot spend hundreds of collars on an authentic balsamic, but still wants to sample some of the unique flavors and textures. Whilst youthful, in balsamic producing terms, the family has acquired older barrels of balsamic over the years.
